Our story

Old favorites. New obsession.

Inside the Santa Canela bakery: the espresso bar under its paper lantern

Santa Canela is a Mexican bakery on Figueroa Street.

The concha with your morning coffee. Churros after dinner. The box of pan dulce somebody brought home.

We take the pastries we grew up with and make them with better ingredients and slow, careful technique.

The recipes are the ones we grew up with.

The execution is the part we work on every day.

Hecho en Highland Park.

Baked by Ellen.

Ellen Ramos cooked at Cosme in New York, then came home to LA — 71 Above, Redbird, Loreto. At Cha Cha Chá in the Arts District, her LA-shaped churro went on the dessert menu in 2022.

Here, everything in the case starts in her kitchen — the conchas, the churros, the jams.

As much Los Angeles as Mexico.

Ellen grew up in El Sereno. Highland Park was where everyone came to hang out, so when it was time for her own bakery, there was only one place to put it.

The pastries stay Mexican. The ideas are Los Angeles. Chile morita goes into the jams. The churros come shaped like the outline of LA — an homage to the Dodgers. The earl grey latte is an LA Smog, not a London Fog.
